Veggie Tacos with Corn-Mango Salsa


2 Hilary's Adzuki Bean Burgers
4 soft corn tortillas
1/4 c onion, chopped
1 bell pepper, chopped
2 T ground cumin
1 T chili powder
1/4 t cayenne pepper
1 t garlic powder
1 c mango, frozen or fresh
1 c corn, frozen or fresh
1 T honey or maple syrup
1/2 c tomato, diced
1 c lettuce or microgreens


In a small skillet, cook chopped onion and pepper until soft. Add the spices and cook for an additional minute. Add corn and mango to the pan and stir thoroughly, heating through. Finish salsa with a little honey or maple syrup and salt to taste. Toast the Adzuki Bean Burgers in a toaster, crumble them up and divide them among warmed soft corn tortillas. Top with lettuce, tomato and warm corn-mango salsa.
