Veggie Chili


2 Hilary's Adzuki Bean Burgers
1 large onion, diced
1 large sweet potato, diced
1 c adzuki beans, cooked and drained
1 c black beans, cooked and drained
1 T coconut oil
2 T chili powder
1/2 t cinnamon
1/2 t freshly ground pepper
1 T cumin
1/2 t garlic powder
1 T maple syrup
1 t sea salt
1/2 t apple cider vinegar
1 15 oz can diced tomato
1 15 oz can tomato sauce
2 garlic cloves, minced


Heat coconut oil in a large pot. Saute onion and sweet potatoes until onions are translucent. Turn the heat down and add all of the spices and chopped garlic. Cook for 1-2 minutes and then add the tomatoes, tomato sauce, apple cider vinegar, maple syrup and water. Cook chili for 20-30 minutes until sweet potatoes are tender. Chop Adzuki Bean Burgers into bite-sized cubes and mix into the chili. Cook for 10 min longer until the veggie burger pieces are heated through. Serve and enjoy! If you have leftover chili, make our Chili Cheese Burgers.
