Spicy Thai Burger with Green Papaya Salad


juice of 2 limes
1-2 red chilies, thinly sliced
1 garlic clove, minced
1 T coconut sugar or brown sugar
1/2 t sea salt
1 green papaya (4 cups), peeled, seeded, and shredded
1/2 c cherry tomatoes, halved
8 green beans, trimmed and chopped
4 green onions, chopped
1/2 c fresh cilantro
1/4 c toasted coconut flakes (optional)
4 Hilary's Spicy Thai Burgers
4 gluten-free buns (optional)


In a medium bowl, whisk together lime juice, chiles, garlic, sugar, and salt. Add papaya, tomatoes, beans, green onion, cilantro, and coconut, and toss to coat with dressing. Cook Hilary's Spicy Thai Burgers according to package directions and place on buns, if using. Top with papaya salad. Enjoy!
