Spicy Sweet Potato Fries


2 sweet potatoes, scrubbed but not peeled
1/3 c coconut oil, melted
2 t chili powder
1 T cumin
1 t garlic powder
2 t smoked paprika
1 t sea salt
1/2 t freshly ground pepper
1/2 lime


Preheat oven to 400 degrees F. Cut the sweet potatoes in half crosswise into two pieces. Cut each of these in half lengthwise. Cut each of these into 1/2-inch wedges. Place the cut sweet potatoes into a large bowl. Add the remaining ingredients, expect for the lime, and toss to mix. Your hands are the best tool for this. Lay the wedges onto a parchment-lined baking sheet or two. They should not overlap. Bake 15 minutes. Flip and bake another 15 minutes or until they are tender. Remove and drizzle with juice from half a lime. Serve with Hilary's Adzuki Bean Burger.
