Savory Yogurt Sausage Bowl

Ingredients

1 medium carrot, peeled
1 t + 1 t extra virgin olive oil
1 t za'atar (wheat free)
pinch sea salt
1 Hilary's Breakfast Sausage
1 c coconut yogurt
2 t fresh parsley, chopped
1 T pomegranate seeds
freshly ground pepper

Preparation

Preheat oven to 400 degrees F.

Cut carrot into wedges. Place on parchment-lined baking sheet and toss with 1 teaspoon olive oil, za’atar, and a pinch of sea salt. Place Hilary’s Breakfast Sausage on the other side of the baking sheet. Bake for 5 minutes and flip sausage and bake for another 5 minutes.

Scoop yogurt into bowl and top with sausage and carrots. Add parsley to bowl. Top everything with pomegranate seeds and freshly ground pepper. Finish with a drizzle of olive oil. Yum!

Note: If you have a gluten intolerance, make sure the za'atar you purchase is wheat free.
