Greek Salad


4 c mixed greens
1 green onion, chopped
12 cherry tomatoes, halved
6 kalamata olives, sliced
1⁄2 cucumber, sliced and halved
1⁄2 c feta cheese or dairy-free alternative (optional)
4 T Hilary's Apple Fennel Dressing
1 pk Hilary's Hemp & Greens Burgers


Place the mixed greens in a medium bowl. Add green onion, tomatoes, olives, cucumber, feta cheese (or dairy-free alternative) and Hilary's Apple Fennel Dressing. Mix ingredients. Place the salad on a plate, and top with cooked Hilary's Hemp & Greens Burger. Want to make it fancy? Thinly slice a cucumber from top to bottom. Hold both ends in a circular shape and use a toothpick to hold in place. Put the cucumber circle on top of your burger and stuff with greens and toppings. You just took this salad from lunch in the office to a fancy dinner. Your date will be so impressed!
