Fresh Greek Tabbouleh

1 pk Hilary's Fresh Greek Millet Medley
1 c cherry tomatoes, halved
1 c cucumbers, cut into 1/4-inch pieces
1 c fresh parsley, chopped
1 scallion, thinly sliced
2 T mint, chopped


Prepare the Hilary's Fresh Greek Millet Medley as per package instructions. Once it is thoroughly cooked, put the millet medley in a large bowl and add the tomatoes, cucumber, parsley, scallion, and mint. Mix to combine.

This tabbouleh is great on its own but even better served with hummus and falafel on the side.
