Cranberry Chutney Veggie Bites


16 Hilary's Original Veggie Bites
12 oz fresh cranberries
1/2 c dried cranberries or raisins
1/2 c apple cider
1/2 c maple syrup or honey
1/3 c apple cider vinegar
1/2 t cinnamon
1/4 t ginger
1/4 t allspice
1 pn cayenne pepper
1/2 c onion, diced
1/2 c celery, chopped
1/2 c tart apple, chopped
4 oz goat cheese (optional)


In a medium sauce pan cook the fresh cranberries, dried cranberries or raisins, apple cider, maple syrup or honey and cider vinegar over medium heat stirring occasionally until the fresh cranberries begin to pop- about 10 minutes. Add the remaining ingredients and cook uncovered, over low heat, for about 40 minutes or until the sauce thickens. Stir occasionally. Taste. Add a bit more sweetener or spice as desired. Cool completely. Just before serving, heat bites according to package directions. Place on serving platter. Top with a spoonful of cranberry chutney and a crumble of goat cheese. Extra cranberry chutney will last for a couple weeks in the fridge.
