|4 leaves lacinato (dinosaur) kale, ribs removed, shredded|
|1/2 cup shredded red cabbage|
|3T Hilary's Ranch Chia Dressing, plus more for dipping|
|2 8" gluten free wraps|
|6 Hilary's Broccoli Casserole Bites, cooked according to package directions|
|1 small ripe avocado, sliced|
|1T toasted pumpkin seeds|
In a medium bowl, toss to combine kale, cabbage, and dressing. Massage with your hands until softened, about 2 minutes. Lay wraps on a clean, flat surface and evenly divide kale mixture in a horizontal line along the center. On each kale bed, place 3 broccoli bites* in a row and top with half of the avocado slices and pumpkin seeds. Fold in the short sides of the wrap, and then fold the bottom wrap over the filling. Roll the wrap away from you into a tight cylinder. Wrap in parchment and cut in half.
