1 c fresh blueberries
3 T apple cider vinegar
2 T ketchup
1 garlic clove, minced
1 T coconut sugar
1/4 t cayenne powder
pinch of salt
1 pkg Hilary's World's Best Veggie Burger
2 buns of your choice
small red onion, thinly sliced
1/2 c microgreens
Combine the blueberries, vinegar, ketchup, garlic, sugar, cayenne powder, and salt in a small saucepan. Bring to a boil and then reduce heat to a simmer. Stir occasionally and cook until blueberries soften and sauce thickens, about 15-20 minutes.
While the sauce is cooking and thickening, prepare the Hilary's World's Best Veggie Burger as per package instructions.
When sauce and burgers are ready you can begin to assemble burger. Place burger on bottom bun and add half of the blubbery BBQ sauce to each burger. Next, add red onion and micro greens. Top with bun and enjoy!
