|12 Hilary's Original Veggie Bites|
|6 c pre-cut slaw mix* (see note below)|
|1 c apple, cut into matchsticks|
|1/4 c fresh parsley, chopped|
|2 T raw pepitas|
|2 T raw sunflower seeds|
|2 T hemp seeds|
|2 T poppy seeds|
|1/4 c Hilary's Beet Vinaigrette|
Preheat the oven to 400 degrees F. Bake the Hilary’s Original Veggie Bites for 17-20 minutes, turning once. While they are baking prepare the slaw.
In a medium bowl, combine the slaw mix with the apples and parsley. Mix in the pepitas, sunflower seeds, hemp seeds, and poppy seeds. Next, add the Hilary’s Beet Vinaigrette and toss to coat.
To plate, put a portion of the slaw on each plate topped with Hilary’s Original Bites.
*pre-cut slaw mixes are an easy substitute to cutting your own vegetables, but if you want to feel more like Martha Stewart and cut your own we suggest this mix: 2 c red cabbage, thinly sliced + 2 c green cabbage, thinly sliced + 1 c Brussels sprouts, thinly sliced + 1 c carrot, peeled and cut into matchsticks
