Swedish “Meat” Balls

Ingredients

4 Hilary's Adzuki Bean Burgers, crumbled
1/2 c celery, finely chopped
1/2 c onion, finely chopped
1/3 c raw unsalted almonds, chopped
1 1/2 c Daiya cheddar style shreds
3 garlic cloves, minced
1 T organic corn starch
1/3 c organic almond milk
1 T parsley, chopped
1 T Pickapeppa Sauce or vegan worcestershire
1 t freshly ground pepper
2 t sea salt
1 egg (optional)

Preparation

Preheat oven to 350 degrees F. Combine all ingredients in a bowl, and shape mixture to walnut sized balls. Place in a very lightly greased or oiled pan and bake covered with foil for 20 minutes. Turn periodically to brown each side. Remove from pan and let sit 5 minutes before serving. For vegan Swedish Meatball Sauce follow a traditional recipe and substitute vegan Sour Cream. Enjoy!
