Sausage Watermelon Brunch Bites

Ingredients

1/2 c balsamic vinegar
1 pk Hilary's Spicy Veggie Sausage
1/2-inch-thick seedless watermelon rounds, cut into 1 1/2-inch squares
1 large cucumber, thinly sliced into 16 rounds
16 basil leaves

Preparation

Add vinegar to small pan over high heat. Bring to a boil then reduce heat to low. Continue to simmer until it reduces to about 1/4 cup. Remove from heat and set aside to cool.

As the vinegar is reducing, heat large sauté pan over medium heat and cook sausages as per package instructions. While cooking, cut the watermelon and cucumber slices. Once the sausage is done, cut them into quarters.

To assemble, begin by setting the watermelon squares on a serving platter. Top each with a slice of cucumber and a quarter of a Hilary's Spicy Veggie Sausage. Then top each with a basil leaf and drizzle with the balsamic reduction.
