Mediterranean Lentil Bowl

Ingredients

3 carrots
1/2 small white onion
1 T olive oil
1/2 t rosemary
4 Hilary's Mediterranean Bites
1/4 c cooked lentils
1 T fresh lemon juice
1/2 t garlic powder
1 c mixed greens
2 baby bell peppers, chopped
1 green onion, chopped
salt and pepper to taste

Preparation

Preheat oven to 400 degrees F. Scrub carrots and slice in half. Chop onion into slices. Toss carrots and onion with olive oil, rosemary, sea salt and pepper. Bake for 35 minutes on a sheet pan, adding the Hilary's Mediterranean Bites to the pan 10 minutes prior to being done. Mix lentils with lemon juice, garlic powder and sea salt and pepper to taste. Layer bowl with mixed greens, roasted vegetables, Hilary's Mediterranean Bites, green onion, and bell peppers. Enjoy!
