Cold Soba Noodle Salad

Ingredients

8 oz 100% buckwheat soba noodles
1/3 c Hilary's Chili Lime Dressing
1 c carrot, thinly sliced
1 c watermelon radish, julienne cut
1/2 c frozen peas, thawed
1 medium cucumber, thinly sliced
1 t black sesame seeds
2 T carrot top greens, chopped

Preparation

Cook soba noodles as per package instructions. Be sure to get 100% buckwheat if you are wanting to make this recipe gluten-free. Next, drain cooked noodles and rinse under cold water until noodles are cold to the touch. Place noodles in a bowl and add Hilary's Chili Lime Dressing along with carrot, radish, peas, cucumber, and sesame seeds. Stir until well combined. Garnish with chopped carrot top greens.
