Black Rice Burger Salad with Ranch Chia Dressing

Ingredients

1 pk Hilary's Black Rice Burgers
4 c Fresh Baby Greens Spring Mix
1/2 red onion, thinly sliced
1/2 fennel bulb
1 pk Love Beets
1 avocado, sliced and divided in half
pinch sea salt
Hilary's Ranch Chia Dressing

Preparation

Heat the Black Rice Burgers in a skillet or in the oven as per package directions. While the burgers are cooking prepare the fennel, red onion, beets and avocado. For the fennel, trim off the root end and the top with stalks. Cut the fennel in half, lengthwise. Remove the center core. Cut each half lengthwise into thin slices - about 1/4". Slice or dice the cooked beets. Mix it all up on a bed of dark, leafy greens and top with Hilary's Ranch Chia Dressing.
