Black Rice

Extremely high in a class of flavonoid antioxidants called anthocyanins, Forbidden Rice® is also rich in iron and, according to Chinese herbal medicine, considered to be a blood tonifier. This rice is from Lotus Foods More Crop Per Drop™ program, which is a super sustainable way for family producers to grow more rice with less water, seed and labor.

Root Veggies

Vegetables deserve the highest praise for offering the most nutrients in the fewest calories. Root vegetables grow underground, are dense. We use turnips, beets, sweet potatoes, garlic, and onions.

Coconut oil is a healthy source of fatty acids. Hilary's uses organic, minimally processed coconut oil in our veggie burgers.

Coconut Oil & Coconut Milk

For many years health experts suggested limiting saturated fatty acids. Newer research further clarifies that there are different types of saturated fats and that medium-chain fatty acids (MCFAs), the type most common in coconut oil and coconut milk, may be of benefit. In fact, coconut oil contains between approximately 55-65% 62% MCFAs, including the healthy fats lauric acid, caprylic acid and capric acid.
Hilary's uses an ancient grain called millet that possesses many health benefits in our minimally processed organic veggie burgers.

Millet

Millet is thought to be one of the first grains cultivated by humans. Much of millet’s success has been its ability to flourish in hot, arid, drought-prone areas. The water requirement of proso millet found in Hilary’s products is possibly the lowest of any major cereal grain. Millet is also an alkaline promoting grain and rich in magnesium, a mineral that supports optimal muscle and nerve function.

Extra Virgin Olive Oil

Olive oil is a culinary oil that gives a luxurious flavor and texture to our salad dressings. We use organic extra virgin olive oil, which is considered an unrefined oil since it is not treated with chemicals or altered by temperature.
Hilary's uses hemp and chia seeds in our dressings and burgers. They are organically grown and rich in Omega-3 fatty acids, fiber and protein.

Hemp & Chia Seeds

Hemp and chia seeds are nutrient rich. They both contain concentrated sources of the omega-3 fatty acid alpha-linolenic acid (ALA), fiber, as well as valuable vegetarian protein.
Hilary's veggie burgers are an excellent source of protein thanks to the organic, minimally processed beans we use in your veggie patties.

Beans & Pulses

Beans are an excellent source of fiber, and when combined with whole grains such as millet, they provide high quality vegetarian protein. Among the beans we use are Adzuki Beans. They stand out as a beautiful little red bean that was first domesticated in East Asia and remains popular in China and Japan. Many people find adzukis an easy bean to digest. A nutrient-rich bean, adzukis are a good source of fiber, folate, copper, potassium, protein, iron, thiamin B1, magnesium and zinc.
Apple cider vinegar adds flavor and health benefits to Hilary's organic salad dressings. Our ingredients are naturally produced and healthy.

Apple Cider Vinegar

Throughout history, apple cider vinegar has been highly regarded. Hippocrates reportedly used it frequently for its amazing health-enhancing qualities. Recent research also shows that it may be able to normalize acid/alkaline levels in the body. Apple cider vinegar is made from pure juice of organic apples fermented in wooden casks until honey-hued and full-flavored
Hilary's only uses Redmond's Real Salt, with more than 60 trace minerals and no processing, in our veggie burgers and salad dressings.

Redmond’s Real Salt

We only use Redmond’s Real Salt in our products, which comes from an ancient sea bed in Central Utah. For more than 30 years Redmond’s has been providing naturally produced salt, nothing added, nothing taken away. That means you get more than 60 trace minerals in a delicious, healthy salt that is never chemically treated, bleached or kiln dried.
Dark leafy greens have tremendous health benefits, and you can find organic, non-GMO greens in Hilary's burgers and dressings.

Leafy Greens

A powerhouse of nutrition, dark leafy greens like arugula, dandelion greens and chard provide your body with a range of vitamins and minerals including tons of Vitamin K, Vitamin B, calcium, magnesium and phytonutrients. They're also packed with fiber and chlorophyll – which is like a natural detox agent!

Colorexa is a US based firm whose core competency is the process and import/export of quinoa grains from Peru. Their facility in Lima provides cleaning and packaging process of the otherwise known Mother Grain of the Incas and manufactures under several high standards that includes BRC, HACCP and USDA's organic certification.

Being able to provide great quality natural food ingredient is something that makes them very proud, however, it is their corporate social responsibility efforts that makes the story whole. Happy Little Faces is a non-profit organization that was started by Colorexa a few years back. This foundation is a school setting that provides free education, hot meals and enrichment outings to less-fortunate children of the Lima area. By doing this, Colorexa and its worldwide partners are providing a brighter future to those in need.

We use “More Crop Per Drop” rice from Lotus Foods (Forbidden Rice and Brown Jasmine Rice), grown using the System of Rice Intensification (SRI), a cultivation method that enables small-scale farmers to double and triple their yields while using 80-90% less seed, 50% less water, and less or no chemical inputs.

Lotus Foods says, “SRI addresses some of the most important challenges we face this century – namely to feed several billion more people with dwindling land and water resources and without further degrading the planet's environment. SRI has been largely grassroots driven, fueled by marginalized women and men farmers. The reason these farmers are so excited about SRI is because it represents an opportunity for more food, more money, better health, and more options – in short, for a way out of poverty.”

Pat & Rachel’s Garden

Pat and Rachel’s Garden, located only 20 miles from us in Olathe, Kansas, provides us with beautiful organic greens (arugula, beet greens, chard, collards, dandelion, kale, parsley and turnip greens) as well as the organic turnips and beets. It’s a wonderful family business with a unique story. Pat and Rachel’s Garden is named for Jim Leek’s two children, who both passed away in their 20’s. Jim says the garden started as a way for the family to work through their grief together and honor their children. We’re excited that as our business at Hilary’s Eat Well expands, Pat and Rachel’s Gardens has expanded right along with us, purchasing extra land and planting more crops.
