Veggie Chili

2 Hilary's Adzuki Bean Burgers
1 large onion, diced
1 large sweet potato, diced
1 c adzuki beans, cooked and drained
1 c black beans, cooked and drained
1 T coconut oil
2 T chili powder
1/2 t cinnamon
1/2 t freshly ground pepper
1 T cumin
1/2 t garlic powder
1 T maple syrup
1 t sea salt
1/2 t apple cider vinegar
1 15 oz can diced tomato
1 15 oz can tomato sauce
2 garlic cloves, minced

 

Preparation

Heat coconut oil in a large pot. Saute onion and sweet potatoes until onions are translucent. Turn the heat down and add all of the spices and chopped garlic. Cook for 1-2 minutes and then add the tomatoes, tomato sauce, apple cider vinegar, maple syrup and water. Cook chili for 20-30 minutes until sweet potatoes are tender. Chop Adzuki Bean Burgers into bite-sized cubes and mix into the chili. Cook for 10 min longer until the veggie burger pieces are heated through. Serve and enjoy!
